Directions
Put your clean and dried pork chops in a non-reactive bowl. These are best when seasoning any meat with citrus. Take some kitchen shears and slice the pork chops in the corners at least an inch to prevent the pork chops from curling while frying.
In a mortar, add the garlic, cilantro stems, 1 tablespoon of Magic 7 and 1 tablespoon of Sazon Desire. Pound with the pestle until crushed.
Add about 1-2 tablespoons of olive oil and 1 lime to the mixture to form a paste.
Take the paste and spread all over the pork chops. Add an additional tablespoon of Magic 7 and Sazon spread evenly throughout the pork chops. Cover and refrigerate for at least 30 minutes while you prepare the roasted tomatillo sauce and pumpkin.
Remove the pork chops from the refrigerator. Heat enough oil to cover the bottom of the pan over medium to medium-high heat. When the oil is hot, cook 2-3 pork chops at a time, 5-7 minutes on the first side. Flip and cook until the chops are golden brown for about 5-7 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops. Use your best judgement based on thickness, but make sure the internal temperature of your chop reaches at least 160 degrees.
Plate your meal and add the roasted tomatillo sauce over the pork chop and top with the sauteed pumpkin. Sprinkle some cilantro over your meal for cuteness. Enjoy!
