Ingredients

1 tiny Sparkler Pumpkin (Citrouille), I used half, diced

1 medium sized Peruvian or any sweet onion, diced

1 small green pepper, diced

3-4 tablespoons of your favorite salted butter- I used Challenge

Fiesta Seasoning

Adobo Fire Seasoning
Directions
Begin by dicing a medium-sized pumpkin into bite-sized pieces. Similarly, dice green pepper and onion the same size.
Heat a generous amount of olive or avocado oil in a large pan over medium heat. Once the oil is hot, add the pumpkin, sprinkle about ¼ tsp Fiesta and Adobo seasonings, and cook until the pumpkin becomes tender and develops a golden-brown hue-about 15 minutes. Stir as needed.
Add the butter and let melt, before adding the green peppers, onions, and ¼ teaspoon more of Adobo. Cook for an additional 15 minutes and taste. Adjust your seasoning, as needed.
Serve over fried pork chops or in tacos! The choices are unlimited!
Recipe Note
Yes, you should add garlic to this recipe! I did not because the roasted tomatillo sauce I served with it was flavorful enough.
